Timeline:

July 25, fermentation rapid, forces airlock from fermenter.

Smells kind of funky at first, then begins to smell sweet.

August 1, Add 1 oz. Goldings whole leaf hops to dry-hop.  Not sure about this one.  It has a slightly sour odor, but I've noticed this smell before.  The smell goes away with time, but is discouraging when trying to brew outstanding beer.

 

August 4, the beer starts to smell better.  Don't get me wrong, it doesn't stink, but doesn't smell sweet like the other ones.  I'll drink it.

August 14, 1999

The keg is in the fridge now getting ready to carbonate.  I vented the blowoff valve to sniff at it.. it smells very good... almost sweet.

August 15, 1999

This beer is fantastic.  Surprisingly smooth to sip from my stein.  heh heh,.    It was dry-hopped so it smells a bit citrus like, but the roasted flavor comes through too.
