Honey Pale Ale

August 28, 1999

Ingredients

• 6 lbs. pale malt extract
• 1 lb. English pale malt
• 1 lb. crystal malt 35`
• 1/2 lb. crystal 100`
• 1 lb. Organic honey
• 1 oz. Galena hops (boil)
• 1 oz. Cascade hops (last 8 minutes)
• 1 oz. Cascade hops (last 2 minutes)
• Irish moss (last 25 minutes)
• California Ale yeast

Timeline:

During the boil, this beer smells like tea.  I am curious to find out how the galena hops affect the taste.  I could smell the honey right before we pitched the yeast.  This should turn out to be a fantastic beer.
