I'm going back to school tomorrow, so I decided to brew one of the beers I said, "I will definitely brew this one again," about.  This time I decided to change the malt character to light malt only -- took out the 1/4 lb. carapils, and substituted the 1/4 lb. crystal 75`with crystal 35`-- hoping the change will give this beer a lighter color that will better enhance the cascade hops.  The extra pound of English pale malt is just for extra fermentable sugars, a little higher alcohol content.  Irish moss will help clarify the beer.
