Brewed as usual.
Fermentation begins and is constant for about four days.
Fermentation slows, smells great.
July 10, 1999
Transfer to secondary fermenter. Add 1 oz. Cascade dry hop. Color is very light, straw color. Smells citrus-like, not too strong.
This beer went fast. Good comments all around. My neighbors, who don't drink beer, even liked it! Brothers liked it, had to cut them off or they would drink it all.
We love Cascade hops and with the lightly roasted crystal malt, the hop character emerges nicely. If you've never smelled Cascade hops, they smell so sweet, almost orange-like, you would buy a car air freshener with that scent... I would.
I will definitely brew this recipe again. (but leave out the 1/4 lb. carapils, and instead of 60`, use 35`.)
